Food trucks are popping up  everywhere these days. Portland International Airport has a trio of great food trucks. And now Minneapolis-St. Paul International Airport has created a Food Truck Alley with Holy Land Deli, Red Cow and Salty Tart, 

They even have a ‘making-of’ video about the project.
